The Challenges Faced
Designing an effective kitchen exhaust system posed several challenges due to the low location, the use of solid fuel cooking equipment, and limited space in the kitchen layout.
The Solution Provided
To address these challenges, our team employed advanced CFD (Computational Fluid Dynamics) modeling techniques. This innovative approach allowed us to optimize the kitchen exhaust system’s performance by determining an alternative exhaust location that deviated from AS 16668 standards. This solution ensured both safety and efficiency in the restaurant’s kitchen operations.
